Eggs are hidden in so many things that we eat, especially backed goods and veggie burgers. I have never used the egg substitutes sold in stores. I prefer to make my own everything. This is a super simple egg replacement that works great in dense breads like banana bread or cornbread, or in veggie and bean burgers. I have used it in a cake with wonderful results too. If you have never used flax eggs as an egg replacement, give it a try. The amount this recipe yields replaces one egg. This is obviously not my original recipe!
- 1 tablespoon ground flax meal
- 3 tablespoons filtered water
Mix the flax meal and water and let it it for 30 minutes. It will thicken to the consistency of egg whites.
