I love, love, love pesto. I have started to experiment with new flavor combinations, and this one is amazing if you like South American sauces. It is cilantro-based and goes well on pizza, pasta, lasagna, enchiladas, fajitas, vegetables…
Recipe:
- 1 cup cilantro, washed and drained
- 1 cup spinach leaves, washed and drained
- 1/2 cup raw, unsalted walnuts
- 1/2 cup raw, unsalted pistachios
- 1 tablespoon lemon juice
- 1 cup olive oil
- 1 clove garlic, smashed
- salt to taste
Add all ingredients except oil to your food processor and pulse until chopped. Slowly add the oil while the machine is running to create a smooth sauce.
