Buffalo Bites

I’m almost embarrassed to admit how much of my life was spent inside Buffalo Wild Wings. From Wing Night with my brother to late-night meetups with my work crew, I have visited entirely too many of their locations. They have to put something in their food to make it that addictive. I’ve cut out the beer and wings for many years, but I still love me some buffalo sauce! I put it on everything, and, yes, I like Frank’s Red Hot Sauce, the original flavor!

I decided to see what happens when potatoes are marinated in it, and the result was so much better than what I could have ever experienced. I just diced a large Russet that had already been boiled and cooled. I like to keep a bowl of boiled potatoes in the fridge for making quick chips, fries, hash browns, you know. So I diced the potato and tossed the chunks with about 1/8 of a cup of hot sauce. I let it hang out for a few minutes before popping in the air fryer for 20 minutes of 400 degrees Fahrenheit. I tossed them around once after about 10 or 15 minutes. That’s it! My new favorite snack. Try them in a taco or on a pizza or salad.

RECIPE

2 Russet potatoes, boiled and cooled

1/4 cup of hot sauce like Frank’s Red Hot Sauce

METHOD

Dice the potatoes into 1/2 to 3/4 inch squares. Place in a deep bowl with the hot sauce and toss well to coat. Let the potatoes soak up the sauce for about 10 minutes.

Air fry on 400°F for 20 minutes, shaking the basket about halfway through. Enjoy!
