I love this oil-free hack! It works great in your favorite salad dressing recipe. Don’t use this as an oil substitute when baking, sauteing, braising, etc. You will end up with a gelatinous mess! This lasts about a week in the fridge. If it thickens up too much in your fridge, dump it into a small sauce pan and whisk continuously over medium heat until it’s liquidy again.
1 tablespoon of corn starch
1 cup of water
Dissolve the cornstarch and 1/4 cup of water in a small sauce pan. Add the remaining water and whisk constantly over medium heat until you have a mixture that’s the consistency of oil. Allow to cool a bit before using in your favorite recipe!
