Baked Oatmeal

There has been a trend around here lately. Work keeps falling through and it’s been cold. Naturally, I’m drawn to the kitchen to keep warm. Since I was planning on working today, but now I’m home, why not have a fun, warm breakfast? It’s 30° outside right now so something warm sounds wonderful. This weather isn’t typical of South Texas and I’m beginning to really miss the Valley right about now!

I figure I can just bake things today to keep warm, haha. Right now, I have a batch of oatmeal baking away and it smells devine. You probably have all the ingredients for this in your pantry. I kept it plain and just added cinnamon, but you can mix in nuts, berries, diced fruit. It doesn’t even matter if it’s fresh or frozen. Either will work just fine. It doesn’t get much easier than that.



RECIPE

3 cups of rolled oats

1 1/2 cups of plant-based milk

2 teaspoons of baking powder

2 tablespoons of flax meal

1 teaspoon of vanilla extract, optional

2 tablespoons of maple syrup

Cinnamon, to taste

Dash of salt, optional

Whatever mix-ins you like, optional

METHOD

Preheat the oven to 350°F.

Stir together all the dry ingredients. Add the wet ingredients and mix well. Add any additional fruit or nuts.

Pour into a 9×9 baking dish. Bake, uncovered, for 40-45 minutes or until it starts to firm up and brown.
