Chipotle Lime Sweet Potato Dressing

I’m doing it again. That thing where I pick one starch and can only have that for 10 days, aka a Mary’s Mini. Sweet potatoes were so darn cheap, I just had to go with them as my starch. I’ll admit they aren’t my favorite or even something I like. Crazy me is tackling them for 10 days though! Today is Day 3 and I’ve had some delicious stuff that I’ll share in a few days. Today, though, I’m really excited about these sweet potato nachos. I sliced a sweet potato really thin and air fried the chips at 385°F for about 12-15 minutes, flipping once halfway through cooking. No beans allowed during this adventure so I used a bunch of chopped spinach, radishes, purple cabbage, and pico de gallo to fill in for the mighty beans. I whipped up this sauce and it was perfect! This will be great on a salad, on tacos, as a dip for veggies…


1 medium sweet potato, steamed

3/4 cup of water + 1-2 tablespoons extra if it’s too dry to process

1 tablespoon of lime juice

1/3 cup of nutritional yeast

1/2 teaspoon of onion powder

1/2 teaspoon of garlic powder

3/4 teaspoon of cumin

3/4 teaspoon of chili powder

1/2 teaspoon of chipotle powder

Salt, to taste


Add everything to a high-speed blender and process until smooth and creamy.
