Day 7 of the damn sweet potatoes and I can safely say that I hate them. I miss cooking a variety of foods. I miss popcorn. I hate sweet potatoes. That being said, I am really digging these mashed potatoes. I roasted a head of garlic in the air fryer at 400°F for about 20 minutes, wrapped in parchment paper, no preheating. I’ve heard you don’t need to wrap it up. I cannot confirm that. I do know my house smells amazing and the garlic is perfectly soft and delicious. I used quite a bit of garlic to make this because being limited to these sweet nasties is making me lose it. If you don’t want a nice punch of garlic, just use less.
RECIPE
1 large sweet potato, steamed or boiled
3 cloves of roasted garlic (read above for roasting hints and quantity recommendation)
1/8 teaspoon of cayenne
1/8 teaspoon of black pepper
1/8 teaspoon of cinnamon
1/8 teaspoon of smoked or regular salt
Sage to sprinkle on top
METHOD
Mash the sweet potato. I left the skin on.
Peel your garlic or squeeze it out of the skin and add it to the potato.
Add the spices and mash everything together until well combined.
Serve warm with sage sprinkled on top.
