It’s definitely salad season, and all my favorite salads do not involve lettuce. Potato salad reigns supreme, but sometimes you just NEED pasta. You feel me? I made this gluten free with Walmart brand gluten-free brown rice pasta, but you do you. I’ll list the veggies I used, but really the sky is the limit. Frozen mixed veggies make this super simple to assemble, but this salad really pops when fresh ones are used.
8 oz macaroni cooked according to the package’s directions
2/3 c vegan mayo
1/2 t each garlic powder and onion powder
1/4 t smoked paprika
Cayenne and black pepper to taste
Salt to taste (I like smoked salt)
1/2 t lemon pepper seasoning
Juice of half a lemon or 2 t vinegar
1/4 c diced bell pepper
1/2 c cucumber cut into half moons
3/4 c steamed broccoli
1/3 c carrot, cut into half moons and steamed
1/2 c grilled sweet corn
1 small roma tomato, diced
Vegan bacon bits
Mix the mayonnaise with the spices and lemon juice or vinegar.
Add the cooked pasta and veggies. Stir to thoroughly combine. Adjust seasonings to taste.
Top with bacon bits before serving.
