Double decker tacos are easily the greatest invention of the Modern World. Yes, that’s right, better than a smart phone, internet, or indoor plumbing. Jk jk. But they are amazing though! Feel free to use corn or flour tortillas. I went with corn to keep it gluten free. I absolutely am a sucker for mustard and mayo sauce on my breakfast sausage. Give it a try! Make as many tacos as your heart desires.
RECIPE
Hard taco shells
Flour or corn tortillas
Hash browns or tater tots, cooked
Breakfast sausage (Beyond Meat makes some)
Chopped spinach or shredded lettuce
Chopped tomatoes
Shredded cheese
Equal parts of mustard and mayo (optional)
METHOD
Mix together your mustard and mayo, about a teaspoon of each per taco unless you like it extra saucy.
Cook the sausages according to the package directions. Heat the taco shells and tortillas. Cook the hash browns or tots.
To assemble, smash the tots onto the soft tortilla. Wrap it around the crunchy shell.
Crumble the sausage into the taco. Add the mustard/mayo sauce. Top with the spinach and tomato. Add the creamy tomatillo. Top with cheese.
Enjoy immediately!
