I must admit I don’t like fruit. Eating it is like punishment. Drinking it, though, is a whole other story. I will drink my fruit daily and am usually pretty boring about it. But this little gem just had to be shared. Use a high-speed blender for best results and add ice if you’re into that.
4 small or 2 large very ripe peaches
1 cup of canned coconut milk
1 tablespoon of maple syrup (optional)
Squeeze of fresh lime (optional)
Quarter the peaches, remove pit, and add to a blender along with the remaining ingredients.
Process until smooth. Serve immediately.
