I shared this recipe about two years ago but somehow managed to lose some of my posts, this one being part of that. I found my old notes and am so excited to share these recipes again. You can air fry or oil fry these. They’re great either way.
1 1/2 cups corn meal
3/4 cup flour (gluten-free mixes work fine)
1 tablespoon sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon of Old Bay
1 tablespoon flax meal
1/2 cup diced onion
1/4 cup diced jalapeño
1/2 cup corn kernels
1 tablespoon cilantro, minced
1/2 cup of Velvety-Smooth Cheese Sauce
1/2 cup plant milk
In a medium bowl, mix all the dry ingredients well. Add in the veggies and stir to coat everything in the dry mix.
Add the cheese sauce and milk. Stir everything really well. Let the batter rest for 15 minutes.
Heat your oil to 325°F or your air fryer to 390°F.
Form ping pong ball sized balls and air fry or drop in the hot oil.
Air fry for 18-20 minutes, flipping halfway through.
If oil frying, fry until golden brown. Drain on a wire rack over a tray.
Serve hot with your favorite dipping sauce like Chipotle Ranch.
