Chilaquiles (Vegan, Gluten-free)

This is a traditional Mexican breakfast dish usually served with eggs, beans, or other protein. You can top it with cheese, sour cream, diced onions, whatever sounds good to you. I used my The Best Vegan Mozzarella along with sour cream, cilantro, caramelized onions, and avocado.

You make the salsa by dry roasting the veggies in a hot pan then blending everything together. Super simple. Then fry up some tortilla slices or triangles until brown. Heat up your sauce, add the fried tortillas, and that’s it. This can very easily be made oil free by air frying the tortillas and skipping the oil when heating the sauce. This makes about 2 cups of tomatillo sauce.

RECIPE

1 pound of tomatillos, remove the husks and wash

1/2 of a yellow onion

2 cloves of garlic or shallots

1-2 jalapenos (optional), remove the seeds if you don’t want it too spicy

3 green onions (optional)

Handful of washed cilantro

1/4 teaspoon of cumin

Salt and pepper

Broth powder or bouillon cube (optional)

Corn tortillas (about 4 per person)

Oil for frying

Toppings of choice such as sour cream, The Best Vegan Mozzarella, cilantro, diced onions, Quick Cotija Cheese

METHOD

Roast the tomatillos, onions, garlic, and peppers in a hot cast iron or in the oven under the broiler. You want the onions and tomatillos to start to become soft. The outside should char a bit too. This takes about 10 minutes in a pan and will be quicker in the oven. Keep an eye on everything and be sure not to burn them.

Add the roasted veggies to a blender along with the seasonings and bouillon cube. Process until well combined. Add the cilantro and process again until the desired consistency is reached. You don’t want big chunks.

Heat oil in a pan over medium high. These can be air fried as well at 400°F until brown and crisp. Cut the tortillas into 4-6 triangles or into strips. I prefer triangles. Fry until golden and crisp or air fry. Place the cooked tortillas on a paper towel lined plate and sprinkle with salt.

In a pan, heat a little oil and add about a cup of sauce. Once hot, add the fried tortillas, stir well to combine. Place on a plate and top with desired toppings. Throw some refried beans and an avocado on there and you have yourself a great start to the day.
